Description

A timeless American comfort dish that brings warmth to any chilly day. This hearty soup features savory lean ground beef, a robust tomato-based broth, and tender vegetables, all perfectly complemented by soft egg noodles. Designed for busy weeknights, this one-pot meal delivers deep, home-cooked flavor in under 30 minutes, making it an ideal choice for a nourishing and satisfying family dinner.

Ingredients

Scale

1 lb lean ground beef
1 small onion, finely diced
1 teaspoon kosher salt
0.5 teaspoon black pepper
1 can (15 oz) Italian-style stewed tomatoes
2 cans (15 oz each) beef broth
1 can (15 oz) petite diced tomatoes (undrained)
1 can (15 oz) mixed vegetables, drained
1 teaspoon dried basil
1 teaspoon dried parsley
1.5 cups uncooked egg noodles

Instructions

Place a large soup pot over medium-high heat.
Add ground beef, onion, salt, and pepper to the pot.
Cook until beef is browned and onion is translucent, using a wooden spoon to crumble the meat.
Drain any excess fat if necessary.
Stir in the Italian-style stewed tomatoes, beef broth, diced tomatoes, dried basil, and dried parsley.
Bring the mixture to a gentle boil.
Add the uncooked egg noodles to the pot and stir well.
Reduce heat and simmer for about 8 to 10 minutes, or until the noodles are tender.
Stir in the canned mixed vegetables and heat through for an additional 2-3 minutes.
Remove from heat and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. If the noodles absorb too much broth, add a splash of water or extra beef broth when reheating. You can substitute the mixed vegetables with fresh frozen peas and carrots for a fresher taste.
