Description

A comforting breakfast sandwich made with buttery toasted croissants, soft-scrambled eggs, pepper jack cheese, smoky bacon, creamy guacamole, and garlic-infused tomato sauce.

Ingredients

Scale
  • 8 large eggs
  • 4 slices beef-based bacon or meat-free smoked alternative
  • 4 buttery croissants
  • 1/2 cup fresh guacamole
  • 4 slices pepper jack cheese
  • 1/2 cup basic garlic-infused tomato sauce
  • Butter, for the skillet

Instructions

1. Preheat the oven to 350 degrees Fahrenheit. Place the croissants cut-side down on a baking sheet and toast until golden and fragrant. Alternatively, toast them in a standard toaster if they fit comfortably.

2. Whisk the eggs gently in a bowl. Warm a skillet over medium-low heat and lightly butter it, then pour in the eggs and stir constantly until soft, moist, and lightly curdled.

3. Cook the bacon or meat-free smoked alternative according to the package directions until crisp, then set aside.

4. Allow the scrambled eggs to rest for about 30 seconds to release excess moisture.

5. Spread the garlic-infused tomato sauce over the base of each toasted croissant. Divide the soft-scrambled eggs between the sandwiches and top each with a slice of pepper jack cheese.

6. Add the crispy bacon or meat-free alternative, followed by a generous dollop of guacamole.

7. Close each sandwich with the croissant lid and serve immediately while warm.

Notes

Use room-temperature eggs for a fluffier scramble and keep the heat low for a velvety texture.

Toast the croissants only until the edges are golden so they remain crisp outside and buttery inside.

For extra heat, stir a pinch of red chili flakes into the tomato sauce.

Mild havarti or sharp cheddar can replace pepper jack.

For a vegan version, use soft-scrambled silken tofu seasoned with turmeric and black salt.

For a gluten-free version, use a gluten-free brioche bun or sturdy gluten-free bread.

For a low-carb version, use large lettuce leaves or portobello mushroom caps instead of the croissant.

Assemble just before serving for the best texture. Leftover assembled sandwiches can be refrigerated in an airtight container for up to one day, but freezing is not recommended.
