Description

These spiced apple cupcakes capture the essence of autumn in a delicate, portable form. Featuring a tender crumb infused with slow-cooked, mashed apple reduction and a aromatic blend of cinnamon, nutmeg, and cloves, they offer a perfect balance of comfort and sophistication. Topped with a velvety caramel buttercream frosting, these cupcakes are a nostalgic treat that transforms simple, everyday orchard fruits into a bakery-quality dessert perfect for sharing with family and friends.

Ingredients

Scale

4 medium apples, peeled and diced into 1-inch cubes
3/4 cup plus 1 tablespoon unsalted butter, softened
1 cup granulated sugar
1 large egg, room temperature
1 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup caramel buttercream frosting (for topping)

Instructions

Place diced apples in a saucepan over medium heat, cook until very soft, then mash thoroughly and let cool.
Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
In a medium bowl, whisk together flour, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt.
In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until fully combined.
Add the mashed apple reduction to the wet mixture and stir well.
Gradually add the dry ingredients alternating with the buttermilk, mixing until just incorporated.
Divide the batter into the prepared cupcake liners, filling each about 2/3 full.
Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
Allow cupcakes to cool completely on a wire rack before swirling with caramel buttercream frosting.

Notes

Ensure your apples are completely cooled after mashing before adding them to the batter to prevent melting the butter. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. These cupcakes freeze exceptionally well without the frosting.
