Ingredients
4 boneless, skinless chicken breasts
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1/2 cup chopped sun-dried tomatoes in oil
2 cloves garlic, minced
1 teaspoon Italian seasoning (oregano, basil, thyme)
1/2 cup chopped onion
Salt and pepper to taste
Instructions
Season chicken breasts with salt and pepper
Heat olive oil in a large skillet and sauté onions and garlic until softened
Place chicken in the crockpot and add sautéed onion mixture
Sprinkle Italian seasoning over the chicken
Pour in heavy cream about 1 hour before cooking ends
Stir in grated Parmesan cheese
Add sun-dried tomatoes during the last 30 minutes of cooking
