1 tbsp. cinnamon
2 flax seed eggs (2 tbsp. ground flaxseed mixed with 6 tbsp. water)
2 cups non-dairy milk
1/3 cup maple syrup
1 tsp. baking powder
8 Medjool dates, pitted (for caramel)
1/2 cup non-dairy milk (for caramel)
1/2 cup water (for caramel)
1/2 tsp. vanilla extract (for caramel)
1 pinch of salt (for caramel)
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Prepare the flax seed eggs by mixing ground flaxseed with water and let sit for 5 minutes.
In a high-speed blender, combine dates, 1/2 cup non-dairy milk, water, vanilla, and salt until smooth to create the caramel sauce.
In a large bowl, combine the rolled oats, baking powder, and cinnamon.
Stir in the non-dairy milk, prepared flax seed eggs, maple syrup, and half of the date caramel sauce.
Fold in the diced apples.
Pour the mixture into the prepared baking dish and drizzle the remaining date caramel over the top.
Bake for 35 to 40 minutes, or until the top is golden and the center is set.
Let cool for 10 minutes before serving.
