Description

Indulge in a rich, moist loaf that perfectly balances garden-fresh zucchini with deep, decadent cocoa. This quick bread is a nutritional powerhouse, incorporating whole-wheat pastry flour and fresh vegetables into a treat that feels like a decadent dessert. It is incredibly easy to prepare—no need to drain the zucchini—resulting in a soft, tender crumb that stays fresh for days. Perfect for breakfast or a satisfying afternoon snack, this wholesome bread is designed to be shared with family and friends.

Ingredients

Scale

2 large eggs
1/2 cup packed light brown sugar
1/3 cup whole-milk plain strained Greek-style yogurt
1/3 cup neutral oil (such as canola or avocado oil)
2 teaspoons vanilla extract
1/2 teaspoon salt
3/4 cup all-purpose flour
1/2 cup whole-wheat pastry flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups loosely packed grated zucchini
1/3 cup bittersweet chocolate chips

Instructions

Preheat your oven to 350°F and prepare a 9-by-5 inch loaf pan with cooking spray and parchment paper.
In a large bowl, whisk together the eggs, brown sugar, Greek yogurt, oil, and vanilla until smooth.
Add the salt, baking soda, and baking powder to the wet mixture and whisk to combine.
Sift in the all-purpose flour, whole-wheat pastry flour, and cocoa powder, mixing until just incorporated.
Fold in the grated zucchini and bittersweet chocolate chips until evenly distributed.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50-60 minutes, or until a tester inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store the loaf in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. You can also freeze individual slices for a quick breakfast on the go.
